I have a fourth grader and a wonderful husband who works hard to allow me to be a stay-at-home mom, a school volunteer, and now, an FRC mentor.

Recipe for Black Bean and Corn Salsa (a.k.a. "Texas Caviar")
from the Downingtown West MOMS Club® cookbook, 2006

1/4 c balsamic vinegar 1 c whole kernel corn
1/4 c cider vinegar 1 c chopped red bell pepper
2 Tbsp brown sugar 3/4 c chopped onion
1 1/2 tsp fresh lime juice 1/3 c minced fresh cilantro
1/2 tsp ground cumin 15 oz can black beans, drained and rinsed
1/4 tsp salt
1 garlic clove, minced

Combine last five ingredients in a large bowl. Bring first seven ingredients to a boil in a small saucepan. Reduce heat and simmer two minutes or until sugar dissolves. Combine vinegar mixture with vegetable mixture. Stir well. Cover and chill.
